  • sirloin beef tips
  • yellow onion
  • red wine
  • garlic
  • Worcestershire
  • cornstarch & water (to make a slurry)
  • cremini mushrooms
  • beef broth
  • Mashed potatoes, to serve (see below for more side dish ideas)

How to make beef tips in the Instant Pot

  1. Assemble all ingredients.
  2. Turn Instant Pot to saute mode, then add olive oil. When oil is smoking, saute beef, and onions.
  3. Remove beef, then add in red wine and saute until reduced.
  4. Turn off saute mode, then add beef back to pot. Mix cornstarch in a small bowl with water, then add it along with garlic, Worcestershire, mushrooms and beef broth.
  5. Pressure cook 20 minutes, then do a natural release of the pressure for 10 minutes.
  6. Serve beef tips overtop of mashed potatoes and garnish with parsley. Serve and enjoy!

How long should you pressure cook beef?

Different cuts of beef vary in tenderness. Cook beef tips for 20-30 minutes to make sure they are tender. The natural release is also key to making the beef more tender.

If the beef is tough, it may need to cook a few minutes longer.

Ingredient substitutions

  • Olive oil– Use any light oil to sauté the meat.
  • Sirloin beef tips – If you can't find sirloin already cut, start with sirloin tip roast and cut it into 1 ½ inch cubes. Stew meat can also work but is often made from tougher cuts of meat. Be sure to cook it for 30 minutes.
  • Yellow onion – Yellow onions in this recipe can easily be substituted with shallots, red or white onions, or even leeks.
  • Red wine – You can use dry white wine or beer instead. Just add extra beef broth if you prefer not to use wine or don't have any.
  • Garlic – Jarred minced garlic or 1 tsp. garlic or onion powder can replace the garlic cloves.
  • Worcestershire sauce – It adds a big flavor boost to the beef. If you don't have any on hand, replace it with soy sauce or liquid aminos, sherry vinegar, or even steak sauce. Or you can leave it out.
  • Cornstarch –Flour or arrowroot both work well to thicken gravy. Add the flour directly to the meat and eliminate the water. Stir well to avoid clumps.
  • Cremini mushrooms – Button mushrooms will also work. You can save a few minutes of prep time by buying a container of pre-sliced mushrooms.
  • Beef broth – Any broth or stock can work. If you use vegetable stock, add some extra Worcestershire sauce, a tablespoon of tomato paste, or soy sauce to make it more flavorful.
  • Mashed potatoes – This is just as amazing over cooked rice, egg noodles or even mashed cauliflower.
  • Parsley – Use fresh oregano or chives or basil instead or leave it out.

Turning the beef into tacos

With a few ingredient tweaks, you can turn these beef tips into fabulous taco meat.

Instead of red wine, add the juice of half a lime and ½ tsp. cumin while sauteing the beef and onions in the first step.
You can also add a can of chiles or add some diced tomatoes here if you want-just reduce the amount of broth you use.

After the final quick release, dice or shred the meat and put it in tortillas or taco shells.

Serve them with your favorite toppings like diced tomatoes, beans, cheese, and sour cream and garnish with cilantro instead of parsley.

Cooking frozen beef tips

It is perfectly safe to cook the beef tips from frozen. Simply skip the saute step and add 5 to 10 minutes to the cook time.

If you want the tips tender enough to fall apart, you can add a few extra minutes onto that.

What to serve with beef tips

The meal is delicious over buttered noodles or rice, along with a healthy side. I like to serve it with these options:

  • Roasted Carrots
  • Green salad with homemade salad dressing
  • Brussels sprouts or brussels sprouts salad
  • Biscuits or dinner rolls

Storing and reheating

Keep any leftovers refrigerated in an airtight container for up to 3 days until ready to reheat in the microwave or on the stove. Sprinkle some water overtop to heat the meat retain moisture if microwaving.

Freezing this recipe

Beef tips are also easy to freeze. Let them cool completely before adding them to zippered bags or freezer-safe containers. You can keep them frozen for about 2 months.

To reheat, thaw in the refrigerator overnight and then reheat on the stove or in the microwave with some water sprinkled overtop.

  • 1 tbsp olive oil
  • 1 lb sirloin beef tips
  • 1/2 tsp each salt & pepper
  • 1 yellow onion, diced
  • 1/2 cup red wine
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 8 oz cremini mushrooms, halved
  • 1 cup beef broth
  • Mashed potatoes, to serve
  • Parsley, for garnish
  • Turn Instant Pot to saute mode, then add olive oil. When oil is smoking, saute beef, salt & pepper and onions for 2-3 minutes until lightly browned. Remove beef, then add in red wine and saute until reduced by half, about 5 minutes.

  • Turn off saute mode, then add beef back to pot. Mix cornstarch in a small bowl with water, then add it along with garlic, Worcestershire, mushrooms and beef broth.

  • Place lid on Instant Pot, press the pressure cook button and set to high, then cook for 20 minutes. The Instant Pot will take about 5-10 minutes to come to pressure, then notify you it's done by beeping.

  • Press the Cancel button then let the Instant Pot do a natural release of the pressure for 10 minutes. Follow by doing a quick release. Open the lid when pressure gauge has dropped and the lid opens easily.

  • Serve beef tips overtop of mashed potatoes and garnish with parsley. Serve and enjoy!
